My grandfather found these in a burned-out house in France during the Great War. The artist's name is Deflin, but I've never been able to find any information about him. They date from the late 1800's. Have any of y'all ever heard of this artist? I'd like to know his history, so I can keep it with the drawings.

Deflin could be a name or a nickname. From Google: "The Deflin surname is an Anglicized form of the Irish Gaelic surname Ó Dobhailéin, meaning "descendant of Dobhailéan". Dobhailéan was a personal name, likely derived from a diminutive of dobhail, which means "unlucky" or "unfortunate". The surname Deflin has been found in various locations, including the USA and Scotland."

He could have been a soldier.

Very nice drawings. Do you know where in France your father found them?

The one titled "En Lorraine" refers to the loss of Lorraine to Prussia during the Franco-Prussian War 1870-71. A loss for France, but not necessarily for the people of Lorraine.
Deflin is also a boy's first name in the Netherlands and Flanders, including French Flanders. So it could be the artist's first name, or a first name as a surname, the result of a patronym.
In this case a (French) Flemish origin makes more sense to me than an Irish one, especially because all texts are in French.

Doesn't seem to be te same. Signatures can vary, but this may be a bit too far off.
On the other hand, both have a connection with Lorraine. The same artist, or siblings?

Only info of note that I can find ,is that Mutual Art list Gustave Delfin, and also a G Delfin,so maybe two different people, and a G Deflin is mentioned in association with two ( Art Nouveau G Delfin Glamorous Postcards) one with a 1902 date, and one describes him as an illustrator. Possibly Gustave Deflin and G Deflin are the same person,or maybe a sibling as suggested by Any Jewlery.Hard to beleive that such a talented person could be so obscure.
