Porcupine Needle Wood Salt and Pepper Shakers

Just got these. There are two other salt and pepper shakers that match the quills on the toothpick holder better. So I am assuming porcupine quills and the other piece is a toothpick holder.
My question is any information about the age and the type of wood ... even though I am not forming it in the structure of a question sentence .

 

Yes, Porcupine quills. They claim it to be Olive wood.

Mine seem to be darker than those. I wonder if that is because of aging or different part of the tree or a different wood. I was reading up on olive trees and it stated the older the tree the darker the wood so maybe.
